Buffalo Chicken Pizza

Total: 30 min
Prep: 10 min
Cook: 20 min
Yield: 4 servings

1 pound chicken tenders, cut into small strips
1 cup buffalo wing sauce plus 2 tablespoons
1 (13.8-ounce) can refrigerated pizza dough
1 cup blue cheese dressing
2 cups shredded mozzarella cheese
1 cup red onions, sliced (1 small red onion)
1 cup celery, diced (2 stalks)

Set up the grill for direct cooking over medium heat and oil the grill grate. Toss chicken strips with 1 cup of buffalo wing sauce in a large bowl. Grill the chicken strips for 3 to 4 minutes per side. While the chicken is grilling, remove the pizza dough from the can and unroll it on a flat surface. Spray both sides of the dough with nonstick cooking spray, place it on the grill, and cook for 2 to 3 minutes per side, watching closely to prevent burning. Spread blue cheese dressing over the pizza, leaving a 1-inch border. Top with mozzarella cheese, red onion, celery, chicken strips, and drizzle with 2 tablespoons of buffalo wing sauce. Cover with the grill lid and cook for 8 to 10 minutes until the cheese is melted and bubbly. Serve hot.

Indoors: Preheat the oven to 425 degrees F and lightly spray a baking sheet with cooking spray. Unroll the dough onto the prepared baking sheet, pressing it out to form a 13 by 9-inch rectangle. Bake in the preheated oven for 7 minutes or until the crust just begins to brown. Remove the crust from the oven, top as directed, and return to the oven for 8 to 10 minutes, or until golden brown and the cheese is melted.
