Black and Blue Cobbler
- 1 cup All-Purpose Flour
- 1 1/2 cups Sugar, divided
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 tsp Cinnamon, ground
- 1/4 tsp Nutmeg, ground
- 2 large Eggs, lightly beaten
- 2 tbsp Whole Milk
- 2 tbsp Canola Oil
- 1 cup Blackberries, fresh or frozen
- 1 cup Blueberries, fresh or frozen
- 3/4 cup Water
- 1 tsp Orange zest, grated
- Whipped Cream or Vanilla Ice Cream, optional
In a electric pressure cooker, add 1 cup water. Combine flour, 3/4 cup sugar, baking powder, salt, cinnamon and nutmeg in a large bowl. Combine eggs, milk and oil then stir into dry ingredients just until moistened. Spread batter evenly onto greased baking dish.
Combine berries, water, orange zest and remaining sugar in a saucepan. Bring to boil. Remove from heat; pour over batter immediately. Place a piece of aluminum foil loosely on top of dish to prevent moisture from getting inside. Place on a trivet then lower into pressure cooker. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 15 minutes. Allow pressure naturally release after cooking for 10 minutes and quick release the remaining pressure. Uncover and let stand for 30 minutes before serving.
Serve with whipped cream or ice cream if desired.
